Representative jars of batches 1-5, 2012. I love how batches 2 and 4 are virtually identical in colour, and comparisons betweeen batch 3 and last year's batch 5 are in the accompanying photo.
Poor old batch 5 is the one that looks like apricot jam! I have decided to leave it as is, as I don't want to sacrifice more good sap to try and salvage a duff batch. It tastes fine, it's just virtually taffy and cloudy as hell.
