Any suggestions?
I'm spending a week-long family reunion in St. Augustine and each family has picked a night to cook. My original thought was shish ka bobs, but that was just going to be way too much skewering. Hamburger/hotdogs was my second choice, but already taken.
I'm not necessarily looking for something easy. I know my way around the kitchen. I've just never cooked for sooo many people.

A dessert maybe? Ice Cream sandwiches are fun to make and they're simple too. |

I have an easy and quick recipe for saucy chicken.
-Diced, cooked chicken
-Cream of chicken soup
-tarragon
-lemon juice
Cook chicken, toss it in with other ingredients, cook until hot, serve over rice or in a baked potato |

chilli. Feeds a crowd and keeps 'em full! :) I hope you all aren't staying in the same house though..could be noxious later! |

Has to be a dinner..., though that's a good after dinner thing for the kids....LOTS of kids |

We are staying in the same house. chili is a definite possibility, but a bit spicy for the beach, maybe.

I have the most amazing recipe for chicken drumsticks that can either be cooked int the oven or bar b q'd. It is so good, that I have made it and eaten it for the last 4 nights lol. Let em know if you fancy it, it goes great with rice or salad or even cold thrown over a salad.
The neighbourhood kids loved it when i bar b q'd it and all teh mothers asked for the recipe. Let me know and i will write it down for you! |

Just have everyone skew their own kabob. Have everything prepared and laid out. I've done this for crowds before and people love it. Especially the kids. |

Sounds very kid friendly and something you can eat on a paper plate :D If it's not too too much trouble I would love to have it!! |

It's tempting, but most of the kids are under 8, actually most of them are and that might be too much work for the moms and dads. Plus, somebody might lose an eye LOL |

here is the recipe, it is to friggin die for!!! And fairly cheap too especially if drumsticks are on sale. It is a very light tasting dish that lets the ginger and lemon stay in your mouth. So good!
This is for 12 drumsticks, 2 a person, so just keep doubling the recipe.
1 tablespoon of grated fresh ginger
1 tablespoon of brown sugar
2 teaspoons of Chinese garlic and chili sauce (got it at the local store in the Chinese section (Lee Kum Lee is the brand I used and it is not spicy)
1/4 teaspoon of ground tumric
1/2 squeezed lime juice
rind of lime grated up
1 cup of plain yoghurt (I used low fat which worked well, )
12 chicken drumsticks.
Mix all the ingredients together, then marinate the chicken for however long you want to, can be made a day ahead if wanted.
For the oven, I just stuck them all in at 350 for 20 mins, then 400 for 20 mins.
for the bar b q, low heat for 15-20 mins turning occasionally, bruch with more sauce. |

A side to go with drumsticks...how about baked potato skins with some bacon, chives and cheese melted on top? bigger ones cut up in advance for the rug rats? They can be eaten with fingers. And potatoes are a veggie. |

pita bread is good, you can grab handfuls of salad and stuff them in the pita bread.
Just so you know, you can not actually taste the yoghurt. I know that a couple of the kids where like Ewwwwwww when i told them what it was , but then they tasted it and where like 'ummmm wow'!!
A good salad sauce to make with the pita bread is
cut up a cucumber, small chunks
salt and pepper
cupfuls of yogurt teaspoon of sugar

Cheese fries :-) They'll love ya. Just do oven-baked frozen krinkle spuds and pour some cheese sauce on 'em, jejeje⢠Or nachos for that matter, with beans, tomatoes, shredded lettuce...

OK, pita stuffed with salad is perfect for the adults and cheesy potato things for the kids. Paper plates and napkins. Very little clean-up and a good light meal that's perfect for the beach. Thanks everybody, I've been agonizing over this all week!
Now how about drinks?????? :D
Anybody know any good beach drinks for the adults? |

LOL, ohhh yeah
Go to Egges, get there largest size party pack frozen drinks (lemon lime, strawberry etc etc which ever flavour you like) and an empty cooler (they provide them too)
divide it between them. Then dump a bottle of vodka (flavored ones are good too) into them and stir.
then stick in freezer till needed.
~~~The other one that goes over well ---
Cut a large water melon lengthways. Scoop out balls of watermelon (and keep for the kids or for desset)
then dump in a bottle of vodka slice thin crisscross lines and mush up some of the melon. stick in fridge till needed!

Unless you feel you have to cook outside, you can't beat a yummy spaghetti with meat sauce to please and fill up a crowd. What kid doesn't like that? Or maybe you can grill peaches and serve them atop ice cream, if you feel the need for grilling. It brings out the natural sugars, plus when I do it, I do halves face down (leaving the skin on the outside)after having pushed them into cinnamon sugar, similarly to what you'd do with a margarita glass prior to a drink. :~) Grilled garlic toast is to die for too.

I have five kids (3 still living at home) so we were always trying to come up with some quick/good/easy when they were all here. I see a couple of people have already mentioned two of them. Spaghetti and chili.
We did the spaghetti with the large loaves of garlic bread. We did chili dogs instead of just chili....that way if you have 'chili haters' they can have regular hotdogs and the rest can 'dish' what they want on their chili dogs. A
Hamburger & Hotdogs on the grill. You can go to the meat department and request hamburger patties to be made in large quantities. Another favorite dish was my 'tator tot casserole'....but it does require an oven :/.

My default dish for big groups is chicken marbella. Not very expensive to prepare, can be put together well ahead of time, looks and tastes elegant, can be served hot, or warm, complicated enough to appeal to grown up palates, simple enough that kids like it. If its anything like my family reunions, by the third round of grilled hot dogs and hamburgers and hot casseroles with a can of soup as a base, people are ready for this bright tasty dish. |
