If I made a profile, where the Saturation was -2, would that cause the photos to turn Black and white?

No. The colours would just be a bit faded. Faded might not be the right word but it's the only one that came to me for this explanation.

edit: One way to experiment would be to shoot in RAW then use the file viewer utility to view the RAW file. In that program you can play with the saturation settings and see what the differences are.

even it did make them BW - i wouldnt recommend using this method for BW shots. change them on the PC afterwards.

i am wondering if boosting saturation would introduce more noise though - if anyone knows...

no it definitely doesnt make more noise. Atleast from what Ive noticed. I use the +2 to saturation now, and I must say I think my pictures look A LOT better... here is an example...
