what is your fav. method ?
word of mouth ? hotel.info ?
been trying various types & wonder what your best method ?
(trying to do a multi-stop trip in Germany ... Moers,Oldenburg,Lubeck)

My advice for hotels in Europe is to:

Avoid the chains like the plague, a Holiday Inn there isn't all that different from one anywhere else.

If you have a contact in the towns you're interested in, ask them first. (My first trip to Germany for work, everyone told me to stay in the Holiday Inn, one town over. When I asked my German counterpart about it, he told me to stay at a hotel in town and arranged it because no one at the hotel spoke very good English. The hotel was in a building that was over 400 years old, above a restaurant and overlooked the town square. Exactly the kind of place you think about staying in Europe.)

Check the towns' websites, they often have links to local hotels.

Depending on how long you'll be staying, you might look into getting a cell phone for the country you'll be in. When I was traveling to Italy for a month at a time, I got a cheap European Tri-band GSM phone and a Tele Italia Mobile SIM card for it (about $80 for both). It takes a bit to get it set up, but it was a tripsaver, more than once.

When we went to europe, we skipped the hotels and went to bed and breakfasts. It was amazing -- you're so much more engrossed in the culture.

They are, however, more expensive.

Good point(s) there. If you want to be a little securely confident of what kind of bed you'll be sleeping in and whether there's soap in the shower, or even running water, go for Hoiday Inn or some other chain.
Of course, if you really want to know what sort of bed you'll be sleeping in etc, stay at home.

Priority club.

I've earned points and have gotten a Nikon D50 and a 32 inch flat screen TV. I also book about 50 night a year for my work.

ok a couple more details ..
my spouse speaks German & we are partially visiting her aunts/uncles/cousins/friends which is the center part of the trip
we are traveling with the kids (7&10)
i can't do some things(rooms/treks/etc)
i would normally do (if it was just my myself or just the adults )
(this is our 15th year anniversary present to ourselves ..)

super cheap rooms / late noisy nights / 10k hikes / simple grab & go food (though the kids aren't too bad at this ;) / hours of museums & architecture with virtually no down time

Plane to Amsterdam arrive Monday, one night on a canal boat, bus to Utrecht in the morning, buy a VW camper at the market Tuesday morning, hit the road to Hochheim, dump the kids with Deb (they should be pretty keen on the idea by now), have a ball. Don't I just think of everything?

my sister and niece use VRBO.com for Europe...they rent houses and stay for about a wk at time in each place. I have used VRBO here in the states alot and are very satisfied...couple of warnings...never rent someplace that doesn't show pictures of "all the rooms"....and always make sure to request that the place is cleaned "just before" you arrive...it could have been cleaned a month before when someone else had rented the cottage and it was clean then....this has been our only problem, but it has been solved by requesting a "recent" cleaning (like the day before)....
