How do I set the 580EX / Camera for flash exposre only, I only want the subject not the background

The easiest way:
Flash on ETTL.
Camera in manual mode. Exposure time on 1/250. Now decrease the aperture (higher numbers) until the background goes dark. In daylight it becomes a bit more difficult because the flash will have to overpower sunlight.
