Ok, It is a beautiful clear sunny day, I am taking some landscape pictures, what aperature do I choose? Should I always select my smallest for overall focus,? In other words what difference would there be say, between f11, f5.6,f2.8 on a mountain or moorland view landscape?

Most lenses are at their sharpest in the middle of their zoom and aperture range, so I guess f/5.6 would be a safe bet if ur lens goes from f2 - f11

If your shooting Landscapes and have a quality lens use the smallest aperature possible, ie f22..this will give you greatest DoF |

It's probably best to use the smallest aperture possible without having to expose for too long, unless you're going for a special long exposure effect with water or such. For daytime landscapes f11 is probably nice and dandy, or even smaller if there's lots of light

Smallest aperture will give you the greatest DoF, hwoever Ben's suggestion to go for the middle of the range is right on. At smallest aperture you may well be beyond the point where diffraction will start to affect sharpness.
With a small focal length optical system, the DoF will be large in any case, especially at wide angle (smallest focal length).
Use a tripod, and remote release if possible, middle-range f-stop. A circular polarizer, if you have one, may be helpful.
If you are shooting a very wide subject and don't need alot of height, consider shooting multiple images and stitching them into a panorama. If you are doing this, remember to:
- overlap by 15-25%
- set white balance to conditions (NOT auto)
- set aperture & shutter manually (they need to remain constant if possible)
- level your tripod as best you can
