Sure you can. Just save brightened and darkened copies, then paste them on top of the mid-range one as layers and add layer masks. I've done that numerous times, or with other effects like B&W conversions or versions with gothic glow applied.
Or do you mean you can't do it automatically using photomatix?

No, I don't always readjust the settings for each and every shot. I'm not unhappy with the cow pic. It's just one of those things that I did not even realize was like that until went to adjust it on the computer. I probably do need to pay better attention to the histogram, and I could have compensated for it if I was looking for it. However, I had no intention of this shot being a challenge entry and just thought it was a fun view of this cow as it was staring me down. I was simply making the point that raw could potentially remove that limitation.
When I do get an SLR, I will probably do some raw when shooting for challenges, or under difficult lighting conditions, but for more casual shooting, JPEG is still the way to go.
I am finding it fun to push what I can achieve on this site with the camera I have, and I will likely come away from this thread with a few tips.
