I have two alien bees and a 5 in 1 reflector, I use Matrix now, but I am not sure thats the best one

If you are talking about Exposure metering modes, none are appropriate for use with strobe lighting.

You either need a flash meter or to do test shots and look at the histogram.

And as for program modes on the camera, go Manual. Dial in the aperture you've set (based on the light meter readings from your strobes) and then adjust the shutter speed up or down to allow (or not allow) the amount of ambient light you want.

Outside (without strobes), it's a whole different story. I'd stick to Av mode.
