Anyone have an opinion on if a collapsible reflector Like this is better or a frame one like this is better?

The frame one would be sturdier, but what you linked to is only the fabric for the frame. You would still need the actual frame too, and is another $109, and they don't have any in stock.

The collapsible would suit most of your needs and is more portable. I have the Westcott 5 in 1 42" set and they work nicely and are good quality, and I'm sure the same could be said for the larger ones too.
