When printing from Photoshop to my Canon IP5000 printer, I have the choice to let PS or Printer deturmin colors/printing.
What should I use for best results?

Sorry, Ken, I saw this earlier and started to reply but had to go pick up a kid -- then forgot.
Most of the time it is best to handle the color management yourself - but..... it is important that you have your printer settings set in such a way to give you the colors / tones you want.
I would suggest first print an image with the printers' color correction OFF, then one with it ON and compare the two. Use that info to calibrate (adjust settings) on your printer as needed.

Also...if the photo says that the document profile is sRGB iec61966-2.1
Should I also select that for the printer profile? |

You should select the printer/paper's ICC profile. |

I use the set printer/paper ICC profiles for the papers I use on my Epson 2100. It took a bit of fiddling with the settings to get it right but it's all automatic now and works well.
