Should it be ok to use lithium batteries in my new flash?
The instruction book takes about regular battery life and NiMH battery life, but does not say anything about using lithium AA batteries.

Of course you're fine using lithiums, that's what the flash was primarily designed for. If i recall correctly, the manual warns you against using the cheaper zinc-carbon batteries as they are liable to leak under high current draw. Anything that modern electronics are happy with, those flashes will love to eat. I use three EF500s, get through about two sets of four batteries per flash per week - only use alkaline batteries myself, as they give you much better recharge rates than rechargables etc.
