What exactly is an EPS file, and how does it differ from a PSD file?

Eps files contain vector data only. You need Illustrator or some other vector program to edit them.
PSD files are the native Photoshop files, as compared to .pspimage for Paint Shop Pro files.

aha, ok......that helps me. Obviously eps files are not what I need then.
