Apparently you should make this one if your horse dies while you are camping....
PIECES OF HORSE MEAT
Ingredients
Horse meat
Tomato sauce
Extravirgin olive oil
Parsley, carrots,chilly pepper, laurel , celery
Take some horse meat cut in cubes and let it browning in a pan with some onion till it takes some taste.
Add 1 litre of tomato sauce every
kilo of meat and don̢۪t forget to add carrots, parsley , celery and two leaves of laurel,
that bruised in the extravirgin olive oil
( like Salento DOP) and chilly pepper( diavolicchio) as you like it( the more it is the better is).
The cooking should happen over a very low heat, in a terracotta pot put in the fireside.
Take away the foam at the beginning of the cooking and let it cooking very slowly for 4 hours at least.
Serve it in small dishes accompanying with big slices of home made bread cooked on the embers.

Horse Meat, Tripe and Spinach Stew from Kazakhstan
4 servings 1½ hours 20 min prep
Change to: servings US Metric
1 lb horse meat
1/2 cleaned and washed tripe
1/2 lb liver
1 beef heart
1 cup spinach
1/4 cup vegetable oil
2-3 onions
salt or pepper
3-4 bay leaves
1 bunch fresh dill
1 teaspoon paprika
1/2 teaspoon cumin
2 cups broth
fresh kale, for serving
Cut the horse meat into serving sized pieces sautee until brown. Halfway through frying, add chopped onion, liver, heart, and continue frying. When done, pour 2 cups broth into the pot. Add washed tripe, bay leaves, spinach, salt, pepper, paprika, dill, and cumin. Bring to a boil, then lower heat and cover. Let simmer for 1 hour. Stew should be thick. Remove bay leaves and serve over fresh kale.
I think I'm going to be sick!

I'd assume beef tripe and beef liver since only the meat was specified "horse"
A lot of dog food is made with horse meat, which is a problem when they poach wild horses to do it. It's good stuff though -- as a kid we couldn't help but refer to the steaks as "filly mignon" : ) |
