I started noticing recently that when I save imges as a jpeg in Photoshop they lose a little bit of saturation. Even black an white images come out a little bit flatter. This happens even if I open a jpeg, make no changes, and save it as a copy. I'm not sure if this has been happening since I switched to CS2 a few weeks ago, or if it's only happening in CS3.
Does anyone else see this, and/or can tell me what I'm doing wrong? I am always using 8-bit color in RGB mode. I have been using 7.0 up until recently, so maybe there's some changes in the color processing that I'm not aware of?
Thanks.

What color space are you in?
The camera can have one (usually sRGB) and you can set it in PS as well -you don't want to be changing these around.
Labs and the web use sRGB, so that's all you really need. Some inkjet printers can use Adobe RGB, and it a slightly larger colorspace, but anytime you convert to color spaces something has to eitehr be thrown out or added from thin air - neither is a good scenario for accurate colors.

Under 'Color Settings' and 'Working Spaces', it says sRGB for the RGB value. My camera is set to Natural: sRGB.

Under View, is "Proof Colors" checked? If so, that's your problem. Uncheck it.
