I was wondering if anyone can walk me through the process of using a color picture, turning it black and white, but leaving the eyes blue?

Desaturate every colour aside from the colour you want.

Using Photoshop, CTRL+U and then play with the colors.

Here's a thread on desaturation.

If his eyes are blue then just desaturate everything but the blue and tweaked the different settings.

If his eyes are not blue, then you would have to mask his eyes and desaturate everything else.

If it's not for a challenge (this ain't challenge legal) make a copy layer. Desaturate the top layer. show image at actual pixel size so you can get real tight. Use the erase tool and erase the top layer where the eyes are. This will work for any color eyes and will retain all the subtleties!
