How accurate are these at calibration? Also how do I know if my monitor and Photoshop are using the color profile this software created?

Mine's worked pretty well for me. Photo colors generally look like they did in real life when the white balance is set.
For the monitor, the Spyder software will install something to your start up folder that loads the profile (on a PC anyway...I assume it does something similar for macs).
For photoshop it's in an options menu, though the exact location probably varies with the version. |

I'm gonna buy a Pantone Huey. $70 through amazon, highly rated, even monitors ambient room light.
