On the shot with the man, usually when sunlight is involved, some lighting control is inevitably necessary. Be it from a reflector, a diffuser or a flash. The simplest method is OFTEN a flash, but not always. Flash use can be a bit complicated. In that shot though, it probably wouldn't have been all that complicated. The backlight would still have come through and your flash metering would have brought the flash exposure down just a notch (flash metering is evaluative and the big white t-shirt would have been pretty strong for the flash... it would have compensated by turning it down just a hair). You probably would have had a pretty decent improvement pretty simply.
On the martini shot, the lighting isn't really the biggest problem. The DOF and background is.
The angle and composition is nice, but there is also a fair bit of 'spatter' that could have been cleaned up....
as to the lighting, a little contrast boost and a bit of a kick in the channel specific hue/saturation would probably do wonders to compensate for that.
But definitely pay attention to your backgrounds... look for less clutter, solid, contrasting colors and differences in luminosity.
