I use Photoshop. You can find it under File, Automate.
It does an okay job for stitching photos.
You can make your job a lot easier if you set your camera to manual exposure and white balance.
I like to keep all the pictures in separate layers, then use layer mask and the transform tool to make the seams perfect.

The Canon camera you have should have come with software that does a pretty good job (Photostitch) - in fact I have a few of them in my portfoilio (shameless plug).

I have tried a few others but I am not on my computer now. If others don't respond before I get back home, I will share these names with you. The only downside is that some of them have a huge learning curve and I generally resort back to Photostitch or Photoshop.

I use this software, it gives you nice control over the stitching progress and you end up with a psd file to post process in Photoshop.

Hope it helps

Edited to say that you should get the PTassembler on that page, and you can follow a very good tutorial they have.

I'll second PTGUI. It can be used alone or with the PanoTools stitching engine. It is arguably the most capable stitcher out there, but it may not be the easiest to learn.

oh, and also on the point of PTGUI, i've done a number of panos, biggest of about 13 images, and it handled it perfectly... couldn't tell joins etc. And these images were from a canon ixus 430 (p/s) so lots of vignetting etc
