I know that I can adjust my white balance (color temp) in post processing when using RAW, but can I use a custom white balance while shooting, like I can while shooting jpeg, or does the camera just ignore all settings when shooting RAW?

I know I could test it myself, but I'm tired and don't feel like fooling with it right now.

camera always has the setting (that shows up in the raw converter as "as shot" value for the WB).

So, yes, you can set the WB even if shooting raw.
