What's the widest angle lense I can get without having have the "fisheye" look?

For your camera? Easy.

Canon Zoom Super Wide Angle EF-S 10-22mm f/3.5-4.5 USM Autofocus Lens

Edit #1: Also an option, but I do not know how well it is being received:

Sigma Zoom Super Wide Angle 10-20mm f/4-5.6 EX DC HSM Autofocus Lens for Canon Digital SLR Cameras

I would not hesitate to recommned the Canon Lens, I don't know about the Sigma. As usual the Sigma is considerably less expensive.

Edit #2: And why not throw in the Tamron - yet another lens I have no direct experience with, but it fits the focal range you are after.

I have the Tamron. You'll get some wide angle distortions inside but it's definitely not fisheye. Nice lens.
