I have lately stopped using Capture ONE Pro and begun using PS's RAW converter.

Does it automatically edit .RAW files so that they are not valid for DPC? I know I can always get the original back by uncheking the automatic adjustments but not sure if the files somehow are marked as edited.

I never save the .RAW files when prompted in Photoshop of course.

It won't ever edit over your CR2 files if thats what you mean. Those will always be the unedited original with all adjustments saved in a side file. The .RAW that Adobe produces is a completly seperate file which you probably don't need to worry about. As far as editing goes in ACR, none of the basic automatic changes will make your converted file illegal either but watch out for things like the vignetting slider as that can be considered a 'major element'.
