Is there any way in PS to print a thumbnail and coresponding EXIF file for record keeping so that I could attached it to a model release for reference. Any other way to organize model releases?

I don't know about the EXIF info, but I think you can print the IPTC info (from the File Info dialog) -- you can put in a caption and print that.

If you have a PC, IrfanView can copy the EXIF data to the clipboard, from where you can paste it into a PS text field (enlarge your canvas?) or use a page-layout program -- you can print it all right out on the release that way.
