I just got a call from a friend who recently purchased a Canon 5D and is having unsatisfactory results with the white balance of some of his images. He's shooting jpeg files and is just taking the card down to the lab to have them printed bypassing Photoshop entirely. I'm shooting RAW in a Nikon system so I don't know and am needing some help from the Canon users out there. Is it possible on the 5D to shoot his gray target and right there in the camera, tell it that color is neutral and then shoot more images under the same light and be ok or is he going to have to adjust in Photoshop to get a custom balance? If he can do it right there, what menu setting is it under? Thanks guys!

shoot a gray card, go to the menu and set that image as the WB image, then go to the LCD on top of the camera and change WB to the CUSTOM one.
