And you're shooting in RAW...what then? I've found a ton of articles about why you expose right. It makes sense to me and I've been doing it for a while now but I've never really known what to do in the post processing to avoid adding a whole bunch of extra noise? Do you re-adjust the exposure to the middle using the RAW conversion software? Or just convert it as-is and use a levels/curves adjustment in PS to bring the shadows down to where they should be? Is there necesarilly a 'best way' to do this?

Use the RAW converter to adjust exposure and contrast so the highlights aren't blocked.

You no longer keep the histogram "to the right" during your RAW conversion. You turn it back into a more traditional looking one by likely lowering the exposure value.
