I have my D50 on the Matrix mode. Can anyone explain the other modes and what type of photography are best for which ones???

My D70 has the following metering modes:

Matrix Metering -- a 1005-pixel sensor is used to analyze the scene in the viewfinder. This is then compared against a database of image profiles (such as dark subject against light background, light subject against dark background, etc). The camera chooses a profile that best fits the scene and calculates exposure based on it.

3D Matrix Metering -- same as Matrix Metering with the additional information from the range-finder. The range-finder tells the camera how far away each of the elements of the scene are, so it is better able to match a profile.

Center-Weighted -- The entire scene is metered, but a small area on the focus point is given greater 'weight' (meaning it is more important).

Spot -- a small (smaller than Center-Weighted) is used to calculate exposure. Unlike Center-Weighted however, the camera meters only the small circle and ignores the rest of the scene.

I believe the D50 has similar metering modes.

As for how and when to use the different metering modes, I wrote this article during the first Exposure Mentering Group.

Metering

Please consider it a rough draft that I never got time to finish. :(
