I've decided that i-tunes really sucks. I can't stand the way it doesn't track new additions to folders unless you rescan the folder, and then it adds duplicates of everything. And it can't automatically go through and remove dead links--you have to delete them individually.

I'm looking for suggestions for a program that I can give a folder tree to, and it will keep the "library" up to date with whatever's in that folder. It would be nice too if it could edit ID3 tags and provided simple file management operations too. Freeware or open source preferred but not required.

I struggled with the same thing initially, but then decided to let iTunes "consolidate" my music library, and have been happy as a clam ever since. It really is a great manager, if you can concede the organizational power to it.
