I understand most of the arguments in favor of shooting in RAW format, but if I have to convert images to jpeg or tiff to post the photos or have them printed, why should I shoot RAW to begin with? Is photoshop conversion less lossy than in camera? I haven't seen this particular question addressed in other RAW vs. jpeg threads.

Out of camera conversion and processing is normally better and you have more control. I use RAW Shooter Premium (Essentials is free and good) and find I need no further processing after I convert to TIFF of JPG. I do use PSE3 to then save for web and / or resize afterwards.

Okay, that answers my question. Thank you!

You have a lot more control over how it looks before you even get to post processing (change exposure, white balance, saturation, contrast, etc...). Also, you are working in 12bit resolution rather than 8bit, so gradients are more gradual, and especially in shadow/darker areas, you can really tell the difference.

As jbsmithana said, I find that for normal processing (no special filters/effects), I have to do very little after RAW conversion. I also use RAW Shooter Premium, BTW.
