I have an arrangement that I can take photographs inside a local diner next week during the early morning breakfast hours (7-8 am). The lighting is fluorescent and has some natural light from windows. I will not be bringing in additional lights.

Do I trust what my camera light meter is telling me or should I make some compensation? What shutter speed/aperature would you try for an interior setting like this? Any advice would be appreciated.

Auto white balance won't help if you have mixed lighting. The camera will probably be confused. Shoot RAW and you can and fix it later.
