I looked through the forums and could not find an answer so:

anyone have experience using extension tubes with a 70-200 VR (or IS for cannon users)? If so how close are you able to get your focus down to?

It depends on the length of the extension tube, but for any given tube length the effects the greatest the wider the lens. The formula if I remember correctly is Length of extension tube/ focal length = magnification.

So it sounds like when set at 70mm this lens will give me a 1:2.5 magnification using the 27.5mm extension tube. I would assume that since the lens now has a mag factor of 1:6.1 that it would bring the focal legnth down from 5' to about 2'.

Does this sound right?
