How about a challenge where you have to shoot a photo suitable for a computer's desktop background or wallpaper? Maybe it's a personal thing, but great photo's do not always make great backgrounds for me. I like backgrounds that leave some space for my icons to stand out, as well as something of interest so that it's not boring. Here are two that I shot and use as wallpapers:
