A Canon thread reminded me I have a question:
If I change my setting from AE/AF lock to AE lock only, then I compose a shot, press the shutter half way, then recompose, will the camera refocus when I actually fire? And conversely if I'm in AF only, will it remeasure exposure?

If it's in AE lock, it'll keep exposure as long as the lock button is held, allowing you to change your focus. If it's in AF lock, it'll keep focus as long as the lock button is held, allowing you to change your exposure.
And no, the camera won't refocus when firing unless it's in AF-C. AF-S means once it finds focus, it'll keep that distance.

One nice feature I recently found out about that button - if you set it to AF-ON, pressing the button performs the role of half-pressing the shutter (ie, the shutter won't perform any auto-focus - the AF/AE button controls this). In this case to lock focus, press the AF/AE button until the desired focus is achieved and simply release the button. Pressing the shutter won't alter the AF lock. This method is a little more comfortable (for me at least) than having to hold the button down to lock focus.
