| Is it my understanding that with the "and" in the title of the challenge both a fruit and vegetable must be in the shot? |

Absolutely not.
'Photograph a fruit. Photograph a vegetable. Photograph a fruit and a vegetable. Photograph as few or as many as you like. Whatever you do, make sure you photograph this week (9/2-9/8).'
I think the first two sentences there explain. Hope this helps!

Any of those are valid choices. The challenge was to photograph one or more fruits and/or vegetables.
