Would a photo taken with my camera sepia setting on be within the basic editing rules? ....sorry if this is a stupid question

I think you can do anything 'in camera' and it is fine for basic. In the case of sepia, you could even do it in post-processing so long as it was done 'manually' (i.e. without the use of a plug-in filter). I hope this is correct. Ben
