I'm doing a photo shoot at our local Gold's Gym for Gold's use for publicizing their facility to corporations. I plan to get photo releases signed by any models who are recognizable in the photos to protect myself (just in case they ever get in someone else's hands besides the Gold's staff). Since the owners and sales rep ordered the shoot, is it necessary for them to sign forms also (because I will be photographing them too).

When it doubt, get a release. The rep might change jobs and not what his or her photo being published.

Quick tip, as you are shooting a group ....

Make sure they know in advance about the model release. It is no good doing the shoot, then mentioning the model release and ONE person gets scared off and refuses to sign .... as then you potentaily can't use any of them.
