I have read something in the past about this but could someone re-enlighten me on why, with the camera size set at identical size (large jpeg) there is nearly 2mb difference in file size between certain shots?
is it just down to more detail in some than in others?

No jpeg encoder, but I think file size depends on detail as well as color information. a black/white would be smaller than color with the same details (details in luminance)

Basically. Some images compress better than others. A photo of a tree will be MUCH larger than a photo of blank sky. Also, a sharpened photo will be larger than a blurry one.

Amount of detail in the shot.

Take a picture of a bird in the sky or the moon at night and compare it to a shot of boats tied down to their moors in a harbor. The Bird in the sky shot is 15/16ths blue where as there is some tiny detail every square inch of the harbor shot.

Yup, more detail takes more space. I photo of mostly sky does not take much room at all but someting like grass or sand takes a lot of room. Some cameras will try to make the photos come out to the same size regardless of the detail, this is not really a good thing since then they are making all the files large where they could have saved space on photos that donĂ¢€™t have much detail.

Color does add a bit in size but not all that much, color is normally sampled at 1 pixel for every 4 luminance pixels (2 in x and 2 in y).
