DOF is short for depth of field.

depth of field ... how much of your photo is in focus

small aperature (f8 up to f32 or more) = deep dof
big aperature (f1 up to maybe f4) = shallow dof

that's the short answer

by how much he means in terms of relative distance to you. So if only things exactly 1' to 1'1" are in focus, that's a shallow DOF. If everything from 3' to infinity is in focus, that's a deep DOF. That's the axis you need to think in with regards to DOF
