I took this photo at a elk farm today.
the elk in the back ground on the left is way over exposed.

What could I have done different to make this a better photo?

As you noted the overexposure, in the future try using the in-camera exposure compensation to fool the auto-exposure.
Compositionally, I would say move around to an angle to get the tree out of competition with the antlers, which look very woody themselves. Also, ideally you would want a catch-light in the eyes, and it's a more interesting picture if one of the animals is looking your way. (probably because they so seldom look your way and stay there for the shot, except in a captivity situation)
