I have been told by 2 sales people that for the Rebel the higher speed CF cards will not make a difference. Any opinions on that?

As you can see, there is very little write speed difference amongst the faster cards. You will see a benefit, however, in going from the most basic cards to the faster cards.
You'll also gain in xfer speed to the 'pooter, if you have a fast reader. I elected to go with the Sandisk "ultra II" cards, a good compromise between speed and cost, IMO.

That is very helpful. That would allow my camera to write at almost double the speed of the card I'm using now.

Yup, and without breaking the bank. I recently bought two Sandisk 1GB Ultra II cards for $82 USD each.
