What would, or could you do to make candle-light look better? I like the dof and the shadows...but the color throws me? Any suggestions??

Yeh, it's really red. there's almost no blue channel at all. One thing you can try is to mix in some of the green channel into the blue using channel mixer. Using that technique, I got the following:

Edit:
If reshooting something like this, I would shoot it in RAW for the greatest possible flexibility in post.

What white balance setting did you use? Try a custome white balance?
