I have seen several photographs where the complete image is in gray scale or B&W with the subject in color or the photograph will be in color and the subject in gray scale or B&W. I use PS 7.0.1, and I cant seem to find an article that steps one through on how to do that. Any help in how to do this?

It's right here in a Tutorial under the Learn > Tutorials menu ... along with several other useful items.
