i had a sampling of this incredible dip called "texas caviar" and i found the recipe. all good to me, except for it needing a bottle of italian dressing.

i cut out pre-packaged, store-bought dressing about a year and a half ago, going strictly evoo+balsamic vinegar.

any suggestions from ya'll foodies?

here's the recipe for texas caviar. it really is awesome!

Italian Vinaigrette Recipe

Ingredients:

¾ cup extra virgin olive oil
¼ cup white wine vinegar
½ tsp minced garlic
½ tsp dried oregano
1 Tbsp chopped parsley
Kosher salt and ground white pepper (or freshly ground black pepper), to taste
Preparation:

Place all the ingredients in a blender and mix for about 10 seconds or until fully combined.

Transfer to a glass bowl and let stand for 30 minutes to let the flavors meld. Give the dressing a good whisk immediately before serving.

This'll make about 8 oz...

2 tbsp lime juice
1 tbsp evoo
1/2 tsp each ground cumin and sugar
1/4 tsp each salt and black pepper

The flavors would go really well with the ingredients in your caviar. Hope it works for ya!

i have ditched premade salad dressings, i have a few stores near me that sell flavored oils and vinegars. most times I'll simply use a balsamic vinegar with no evo (blackberry currant or a coconut white balsamic). not to mention these flavored vinegars are delight to reduce and cook with.

edit, on second inspection i see you were looking for one to go with your recipe. I thin Mary Ann's above would work well, the lime juice is the key. my wife makes the Mexican salad dips all the time and they all seem to call for lime juice and evo in some form.

Well, here's a little bit of California gold to go with your Texas Caviar. My mom was on a salt free diet and I made this for her when she stayed with me.

3/4c extra virgin olive oil
1/4c Orange Mango passion fruit balsamic vinegar
a smidgeon of fresh cilantro from the top of the bundle
a few red pepper flakes
a sprinkle of McCormick's salt free garlic & herb
a couple of turns from the fresh peppercorn grinder
a little bit of fresh onion (green or red)
a little bit of squished fresh garlic
1 tsp of smoked paprika
1 tsp of regular paprika
a smidgeon of yellow mustard powder

I put this stuff in a blender until it's well...BLENDED. If you let it sit in the bottle for a couple of days, then the flavor gets better.

Anyways, just a thought...;-)

that texas caviar looks delicious. the picture they show has a lot of corn in it but corn isn't an ingredient in the recipe, though. i guess you need to adlib.

California Olive Ranch EVOO + lemon juice + cilantro and a little sprinkling of feta cheese on arugula/spinach salad = yummy.

Pictures seem to be reader-provided, and they are all different. Certainly, corn's an obvious addition to the mix...
