| I have a high key portrait with my subject against an all white background. How would I go about changing the background to a different color on photoshop? (My subject is also dressed in white) |

| Try the magnetic lassoo tool. Select the person, then invert selection. |

| I would create a new layer, paint the color you want around the person in that layer, then change the layering mode until the edge of the white and the person look natural .. |

what i usually do is just use the flood tool at a very low tolerance.

Best way is to make a quick mask and fill on a new layer - easily editable - it's on a separate layer - and you get a nice soft edge to boot.
