Been trying to get some pics of the birds at one of our local farm parks and doing sort of ok......but could do better! Thoughts and ideas on camera settings that would give good results........

I would focus on the eyes as a permanent rule. If you need to focus and recompose there should be a focus lock on the 300D..
For metering, I always use manual everything - set your WB to overcast (as it looks?) and toy from there.
Use a spot meter on the birds forehead and shoot - view - adjust - shoot - view adjust again if needed. Generally you Will have the correct exposure after a couple of attempts and you will also gain more insight into what is best for what situation quicker.
For aperture i would use something larger, say f2.8 to further blur the background and bring out the bird more.
