just checking on the rules...
if i was to submit a photo where i had modelled something out of chocolate, would it break the rules on artwork? i thought i'd be safe, as it wouldn't be an 'existing work of art', but wanted to check just in case.

("Artwork. Literal photographic representations of the entirety of existing works of art (including your own) are not considered acceptable submissions, however creative depictions or interpretations are permissible. This includes, but is not limited to paintings, sculptures, photographs, drawings, and computer artwork.")

The general rule of thumb is that if it's 3D, then the lighting and angle make the shot unique to you, and thus OK. We only really tend to DQ 2D artworks that fill the entire frame of the photo, and have no context. For example, a photo of a poster will probably get DQd, but a photo of a poster with someone standing in front of it probably wont be.

You also need to take copyright infringement into consideration. If the primary subject of the photo is the piece of artwork, it can be considered a reproduction of another artist's piece. If it's a photo of a sculpture that you've created specifically for the contest and you make a note of that in your contest entry, I don't see any problem with that.
