am trying to shoot the next challenge in back & white,
have noticed some interesting textures that i missed
in colour.
any recipies? do i use channels or desaturate?

If you are using Photoshop, a lot of people recommend using the Channel Mixer in monochrome mode to convert RGB to Grayscale. You can control how much each color channel contributes to the final image. Play around with it on an adjustment layer.
