Whichever works best at the given moment.

With studio strobes or my handful of Vivitar 285HV flashes firing,manual only. Although I have had some success with Av mode for balancing ambient.

When shooting events, I've been known to switch to auto and ride the FEC control.

Having shot with a purely manual camera for many years (K1000, then Leica) I find fully manual on digital cameras too fiddly - too many little buttons to push. I use auto focus with centre metring - that way I can set the focus and compose in a split second (I'm not mad on the focus screen on the Canon, and my eyes aren't what they were). I also use Aperture priority almost exclusively. Every now and then I'll go for fully manual when I need specific controls, but that would be on a set-up shot, which I do very rarely. I find this set-up most closely approximates my shooting style with the manual film cameras. Have never used auto on the Canon, nor any of the other 'program' modes.

if flash is all that annoys you when using Auto, there is also an "Auto without Flash" mode (at least my camera has it) in which everything is set automatically and flash will never fire.
