I am new to LR3 (lots of CS5 photoshop and bridge experience and trying LR3 to see if it will help my workflow more than bridge)

Another question ... expect more to come :)

Can I change the keyboard shortcuts ... I can't see an option anywhere?

I've used C for crop for years and in LR3 it is compare which is really getting on my nerves!

i don't think so. but you'll learn the LR specific ones shortly, i'm quite sure.
