Everytime I see something on how to work a photo in PS I go and try it and most times it works, so I figured you people might be able to answer this for me. Can you select more than one area of a photo say with lasso tool at once and then invert it to work the filters on the rest of the photo ?

Yep, select the first area, hold down "shift", select the second area, third area, etc., till you're done.
From the menu, choose select/inverse, and the rest of the image is selected.
