So I was at the store today and decided to try a new cheese. It's called Red Dragon. A cheddar made with welsh ale and mustard seeds. Oh my god! Just to die for.

Any other cheese suggestions?

i like jalapeno montery jack. or a dill havarti. horseradish cheese is good too.

I love cheese but unfortunately i suffer from migraines. The only cheese i can seem to eat without bad side effects is Mainland Colby. All you aussies will know that one.:) I love Cracker Barrel vintage cheese. That would be one of my faves.

Dill Havarti is the best! I can't get enough of it.

cheese is just one of the best things to eat. unfortunately im lactose intolerant...but does that stop me from eating cheese? no way.

Have you tried Kraft Singles? OMG! It goes with everything from white bread to Spam! Next time you want a real mouth treat try a taco (pronounced tay-co) just take a little cooked ground beef, place it on a slice of Wonder Bread, cover liberally with catsup, and top with a slice of Kraft Singles. Fold it in half and start munching. Mmmm now that's good eating!

Another fave is Cahill Guinness. Cheddar with guinness in it.

Hmm, why do my favorite cheeses involve alcohol...

My fav cheese is Cheeze Whiz. :) Nothing like cheese in a metal can with a plastic spout.

Actually, to be honest, my favorite cheese is sharp swiss followed by sharp cheddar. Then jalapeño or any pepper-based cheese such as habanero. Then there is Monterey and Jack which are ok and I'll eat them but by far my favorite is swiss. Mmm....cheese!

at the end of the day nothing beats a really strong mature cheddar with some onion on a crusty bread roll, and a pint of real ale by it's side

I'd have to say 'Catherdral City', not because it's the best, just the fact that it's the only one that is easy to get over here - the Swiss tend to look at me in a strange way when I ask for non-Swiss cheese :)

I'm a sucker for the soft cheeses.. Brie, Camambert.. but best of all.. St-André .. Not becuase it's my name, but it's almost the consistancy of butter, yet sooo much better :)

Agreed. Just put the spout in yer piehole and wonderful cheesy goodness saturates your tastebuds. The sight of this also tends to discourage food thievery by others in the house.

My favorite way to consume cheese is crumbled Roquefort, or bleu, in a salad. Everybody says I put way too much in but I haven't found my own "too much" level yet. Second choice would be a slice of medium sharp cheddar, Wisconsin preferably, lightly melted over a couple of stripes of bacon on a slice of rye toast.

Excuse me now, I'm heading for the kitchen.

There aren't too many Amish into digital photography. ;-)

Sadly, the best soft cheeses are not available in the USA. Epoisse is absolutely incredible and I make it a point to make that my second purchase anytime I land in France. (The first being cab fare to the cheese shop). Another great cheese, although not as strong in flavor, is Mont d'Or. Unfortunately, the FDA (or is it USDA) feels that it isn't safe for US citizens to eat unpasteurized cheeses and therefor they can't be imported. Damn government!!!!!
