Does anyone know what good camera stores there are in Hawaii? I will be in Waikiki mainly. I normally buy my Canon gear from the US and this is a good way to avoid postage and GST. I am mainly looking at Canon lenses.

Sorry bud, Nadda one. I lived in Hawaii for most my life and recently moved to the "mainland" thats what we called the 48 states, and gotta say availability of high end stores are nil. The best they got is Rits/Wolf camera stores. I would not buy anything in Waikiki Beach, its a tourist trap. Try shopping in Ala Moana Shopping Center or Pearl Ridge Shopping Center. If I had to buy electronics, specifically camera gear in Hawaii, I'd shop Shirokiya. Good luck and enjoy your trip.

You can try Francis Camera (don't know the address). I never been there, but I've heard good things. There is also a Ritz Camera in Ala Moana on the ground level. Personally, I'd advise againist Shirokiya for camera equipment, they're a bit over priced on some items, don't carry camera lens for slrs, and they sold me a used s85 with missing items (the cd, battery and memory stick) as new, but other than that Shirokiya is a good store.
Maybe you can also check out Circuit City and CompUSA.
